Many people think of sauté pans as just another frying pan, but sauté skillets are distinctly different in their construction and purpose. Featuring wide, flat bottoms and straight, relatively tall sides, sauté pans have a slightly larger cooking surface than classic skillets and help contain liquid better, too.
